Black Bean Burger

Ingredients

  • 1 can (16 oz) black beans (drained, rinsed & dried)
  • 1/2 yellow onion - chopped
  • 1/2 bell pepper - chopped
  • 1 clove garlic - chopped
  • 2/3 tsp parsley – dry
  • 2/3 tsp basil – dry
  • 1/2 TBSP chili powder
  • 2 egg whites
  • 3/4 cup bread crumbs

Preparation

Step 1

Using a fork, mash beans in a medium bowl until thick and pasty.

Using food processor, finely chop onion, bell pepper and garlic. Strain out water as much as possible. Stir mixture into beans.

In a small bowl, combine egg whites and spices. Stir into bean mixture.

Gradually mix in bread crumbs until mixture is sticky and holds together. Form patties.

Grill on foil for 8-10 minutes.
