Cheesy Chicken Enchiladas

Ingredients
- 1/4 c. (1/2 stick) butter
- 1 c. chopped onion
- 2 cloves garlic, minced
- 1/4 c. flour
- 1 c. chicken broth
- 4 oz. cream cheese, softened
- 2 c. (8 oz) shredded cheese blend, divided
- 1 c. shredded cooked chicken
- 1 can (7 oz) diced mild green chiles, drained
- 1/2 c. diced pimientos
- 6 (8") tortillas, warmed
- 1/4 c. chopped fresh cilantro
- 3/4 c. salsa

Step 1
Preheat oven to 350. Spray 13 x 9 baking dish w/ nonstick cooking spray.
Melt butter in med. saucepan over med. heat. Add onion & garlic, cook till tender. Add flour, cook & stir 1 min. Gradually add chicken broth, cook & stir 2-3 mins. or till slightly thickened. Add cream cheese, still till melted. Stir in 1/2 c. shredded cheese, chicken, chiles, and pimientos.
Spoon about 1/3 c. mixture down center of each tortilla. Roll up & place seam side down in prepared baking dish. Pour remaining mixture over enchiladas; sprinkle w/ remaining 1 1/2 c. shredded cheese.
Bake 20 mins. or till bubbly and lightly browned. Sprinkle w/ cilantro. Serve w/ salsa.
