Ham and Veggie Scramble

Ingredients
- 8 eggs, beaten
- 2 T. olive oil
- 1/2 cup diced Canadian bacon
- 2 green onions, chopped
- 1/4 red onion, diced
- 1 small zucchini, chopped
- 4 asparagas sprigs, chopped
- 1 cup fresh spinach
- 2 tomatoes, chopped and seeded to remove excess juice
- pepper and Veggie Bombay seasoning to taste

Preparation
Step 1
In a large skillet over medium high heat, saute onions, zucchini, asparagas, and ham imn 2 T. olive oil for about 5 minutes or until veggies begin to soften. Add seasoning, spinach and tomotoes and cook about 1 minute or until spinach begins to wilt. Add eggs and reduce heat to medium. Cook stirring frequently until eggs are cooked through. Serve with your favorite garnish (salsa, sour cream, etc.).
