  • 3 tablespoons butter, plus more for greasing dish
  • 1 package (16 ounces) frozen broccoli florets, thawed
  • 1 package Petite Medley Potatoes, sliced 1/4 inch thick (Kroger produce)
  • 3 tablespoons flour
  • 2 cups milk
  • 2 1/2 cups shredded cheddar cheese, divided
  • 2 large eggs, lightly beaten
  • 1 tablespoon kosher salt
  • 2 teaspoons black pepper
  • 1/2 teaspoon grated nutmeg
  • 2 cups corn flakes, crushed

Step 1

1. Preheat oven to 350; lightly butter a 9 x 13 baking dish.

2. In a large bowl, combine broccoli florets and sliced potatoes. Set aside.

3. Melt butter in a saucepan over medium heat and whisk in the flour; cook, whisking constantly for about 1 minute. Slowly pour in milk, whisking continuously, until it thickens and just comes to a simmer, about 5 minutes. Transfer to a bowl to cool slightly. Add 2 cups of cheese, beaten eggs, salt, pepper, and nutmeg. Stir to combine, then pour over vegetables. Mix well and transfer to baking dish.

4. Cover with foil and bake 45 minutes. Meanwhile combine corn flakes, remaining 1/2 cup of cheese and salt and pepper in a small bowl.

5. Remove foil from casserole and sprinkle corn flake mixture evenly over the top. Bake 15 minutes longer until golden brown.
