Ingredients

  • 1 1/2 cups quinoa, rinsed well
  • 3 cups of low sodium vegetable broth or water
  • 1 red bell pepper, diced
  • 1/4 cup of red onions, diced
  • 1 shallot, chopped
  • 1/4 cup of dill, chopped
  • 1/4 cup parsley, chopped
  • 1/2 cup Balsamic dressing**
  • Balsamic dressing ingredients: 1/4 cup olive, 1 TBSP flaxseed, walnut or sesame oil; 2 TBSP of apple cider vinegar or balsamic vinegar; 1 TBSP spicy mustard ; salt and pepper

Preparation

Step 1

1. Add quinoa to broth or water in a medium saucepan and bring to a boil. Reduce to simmer then cover and cook 15 minutes without stirring or until liquid is absorbed.
2. Remove ingredients from saucepan and place in a bowl. Cool slightly and toss with salad dressing and remaining ingredients. Salt and pepper to taste. You can add any vegetables , salad or on top or black beans.
