Ingredients

  • 1/2 cup creamy peanut butter (may use chunky)
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 egg whites
  • 1/2 t. vanilla extract
  • 1 cup all-purpose flour
  • 1/2 t. baking soda
  • 2 cups quick-cooking oats
  • Option: add 1/2 cup chopped peanuts

Preparation

Step 1

Preheat oven to 375 degrees. Combine peanut butter, butter, sugar and brown sugar in a bowl. Beat with an electric mixer until light and fluffy, about 3 minutes. Beat in egg whites and vanilla.
Mix flour and baking soda. Add to bowl; mix well. Stir in oats.
Drop dough by rounded teaspoonfuls onto 2 ungreased baking sheets, 2 inches apart.
Flatten cookies slightly with a fork or bottom of a glass dipped in sugar. Bake cookies for about 10 minutes; cool on baking sheets for 1 minute. Place on wire racks to cool completely.
