Spinach and Brie Rounds

Ingredients
- 1 loaf of French bread
- 3 oz. olive oil
- 11.5 oz creamed spinach (or make your own)
- 1 small wheel Brie
- 5-6 cherry tomatoes, quartered
- black pepper to taste

Step 1
Preheat oven to 400 degrees.
Slice the French loaf into 1/2" slices and lay them out on a baking sheet. Brush the slices of bread with olive oil. Bake for 15 minutes, or until golden brown. While bread is toasting, slice the Brie in half, turn the cut-side down and slice into pieces that fit the crouton. Remove bread from the oven, top it with one teaspoon of creamed spinach, top the spinach with a piece of Brie. Return to oven. Heat an additional 10 minutes. Top with a quarter cherry tomato and sprinkle of black pepper.
