Strawberry - Kiwi Flan

Ingredients
- Glaze:
- 1 pkg. yellow cake mix
- 1 pkg. (3oz) vanilla instant pudding
- 1 c. milk
- 1 c. light cream
- fruit to cover top.
- 1 tbsp. cornstarch
- 1/4 cup white sugar
- 1/2 cup water
- 1/2 cup orange juice
- 2 tbsp. lemon juice

Step 1
To make shell, prepare cake mix according to package directions and pour batter into flan pan that has been sprayed with Pam.
Bake in a preheated 350 degree oven for about 25 minutes. Cool for 10 minutes and remove from pan.
While flan is cooling prepare pudding using milk & cream, according to package directions.
Also prepare glaze at this time.
To prepare glaze mix together sugar and cornstarch in a small saucepan. Whisk in the water, orange juice and lemon juice. Bring to a boil over medium heat. Boil gently for one minute. Remove from heat and allow to cool completely.
Pour pudding into cooled flan shell.
Top with kiwi, strawberry and raspberries.
Chill until firm.
Then pour glaze over top.
Garnish with a small amount of whipped cream!
