Ingredients
- 6 cups shredded green cabbage
- 1 cup shredded carrot
- 3 tbsp chopped fresh parsley
- 1/4 cup cider vinegar
- 3 tbsp sugar
- 1 tbsp lemon juice
- 1 cup mayonnaise
- salt and pepper

Preparation
Step 1
Combine the cabbage, carrot and parsley in a mixing b owl and set aside.
In a separate bowl, mix the vinegar, sugar and lemon juice, stirring to dissolve the sugar. Add this mixture to the mayonnaise and stir until combined.
Add the mayonnaise mixture to the cabbage mixture and mix until the cabbage is well coated. Season to taste with salt and pepper.
Refrigerate for at least 1 hour before serving. This will keep in the refrigerator for up to 3 days.
