Black Bean Cakes

Ingredients

  • 6 1/2 cups canned black beans
  • 1/2 cup salsa
  • 1/2 cup red onions, finely diced
  • 1 1/4 cup red bell peppers, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 2 cups bread crumbs
  • 1 tablespoon jalapeno pepper, diced
  • 1/2 teaspoon Tabasco sauce
  • 1 teaspoon Tabasco jalapeno sauce
  • 2 cups tortilla chip breading
  • Tortilla Chip breading
  • 2 cups crushed tortilla chips
  • 1 teaspoon cumin
  • 1 teaspoon coriander

Preparation

Step 1

Place beans in a colander and rinse in cold water. Drain well, for at least 10 minutes. Add drained beans and all the other ingredients except for the tortilla chip breading into a mixing bowl. Blend well with your hands, mashing some of the beans to form a thick mixture. Form into 3- ounce patties.

Place the ingredients for the tortilla chip breading in a food processor and process to a crumb consistency. Dredge each patty in the tortilla chip breading and set aside.

Spray a large skillet with cooking spray or add two tablespoons of olive oil, then heat over medium-high heat. SAute bean cakes, turning when they are golden brown. Serve with salsa and sour cream.
