Chicken and Rice - Instant Pot

Ingredients
- 1 lb. frozen boneless skinless chicken breast
- 1 T. Olive Oil
- 2 Cloves Garlic, minced
- 3 green onions (or, 1/4 onion chopped)
- 3 Carrots diced
- 1 c. Mushrooms
- 1 1/2 c. Brown Rice rinsed and drained
- 2 c. Chicken Broth
- 2 tsp Dried Thyme
- Salt and Pepper

Preparation
Step 1
1. On the Saute setting, preheat on normal for 1 1/2 minutes
2. Add Oil
3. Add garlic, onion, carrots, and mushrooms. Saute 4 min.
4. Add 1/2 c. chicken broth to deglaze vegetables
5. Add 1 1/2 c. chicken broth and the rinsed rice. Stir
6. Add thyme, salt and pepper. Stir
7. Add frozen chicken breasts
8. Place lid, lock, and set to "Sealing"
9. Cook on manual, high pressure for 20 minutes
10. Switch valve to "release", release the pressure, then lift lid carefully
11. Cut chicken into chunks with kitchen shears or shred with 2 forks.
12. Serve
