Ingredients

  • Long Grain Rice 5 Cups

  • Chicken Stock, Boiling 2½ Qts (10 Cups)

  • Onions, diced 6 oz

  • Salt TT

  • Clarified Butter 2 oz

  • Olive Oil 2 oz

  • Bay leaf 1

Directions

1.Bring stock to a boil in a saucepan 2.Cut onions into small dice 3.Heat oil and butter in a heavy saucepot 4.Add onion and bay leaf, sauté till onion is tender, but not brown 5.Add the rice and stir to coat it completely in the fat, do not allow the rice to brown 6.Pour in the boiling stock and season with the salt 7.Cover pot tightly, place in 350 degree oven. Bake until the liquid is absorbed and rice is fluffy and tender, approximately 18- 20 minutes. (May be longer) 8.Transfer to serving platter, fluff the rice with a fork, and remove the bay leaf. Keep hot for service.
