Ingredients
- 2 russet potatoes, shredded and squeezed dry
- 1/2 lb. chorizo
- 1 medium onion, chopped
- 2 eggs
- 1/2 cup flour
- salt and pepper
- 1 cup vegetable oil for frying

Step 1
Shred potatoes, squeeze in paper towels to dry, set aside.
Cook chorizo. Add onions and cook until soft.
Add eggs to shredded potatoes, stir to mix. Stir in flour, salt and pepper. Add chorizo to potato mixture, careful not to over mix.
Wipe out frying pan. Add 1 cup oil to pan. Heat oil.
Form mixture into patties. Fry on on side until golden brown. Flip to brown other side.
Sere with salsa.
