CREAMY*****Yogurt Dressing - Mediterranean Fresh

This is great - keeps a long time in the fridge and stays together without separating. Taste can be varied by varying the herbs.
I had a couple of tablespoons on top of some asparagus that had been broiled (sans oil).
02/05/10 - had on prosciutto-wrapped salmon - was great

Ingredients
- 20 servings (1 tablespoon each)
- 1 cup 2% Greek yogurt
- 3 tbsp. best EVOO
- 2 tbsp. lemon juice
- sea salt
- 1 - 2 tsp. minced garlic (optional)
- 2 tbsp. chopped fresh herbs of choice - mint, dill, chives, parsley, basil, cilantro or combination

Step 1
* Whisk together yogurt, oil and lemon juice. Season to taste with salt and stir in fresh herbs. Leave out garlic if making for work salads.
