Ingredients

  • 1/3 cup Buttermilk or 1/3 cup milk with 2 tsp white vinegar
  • 2 large cloves garlic,finely chopped
  • 3/4 tsp hot sauce
  • 1 pound boneless chicken breasts, cut into strips or boneless chicken tenderloins
  • Coating
  • 3/4 cup saltines( 20 saltines), crushed into crumbs
  • 1 tsp paprika
  • 1/2 tsp salt
  • 2 tbsp parmesan cheese

Preparation

Step 1

1. Stir together buttermilk, garlic and red pepper sauce in a large bowl. Add chicken and toss until chicken is evenly coated.Refrigerate for 30 minutes
2.Prepare coating- Combine saltine crumbs with paprika, salt and 1 tbsp parmesan cheese in large ziploc bag.
3. Line a large rimmed baking sheet with Foil and coat with Pam
4.Drain chicken and place several pieces in ziploc bag and shake to coat, arrange on baking sheet and repeat with remaining chicken
5. Sprinkle with remaining parmesan cheese. Bake in a preheat oven at 450 for 10-15 minutes until golden and chicken is cooked through

NOTE: Can be made and frozen up to one month of party.Freeze chicken on baking sheet . When frozen ,place chicken in freezer ziploc bags and seal. To bake frozen-place chicken on a foil lined rimmed baking sheet coated with Pam. Bake in Preheated 450 for 20-25 minutes or until chicken is golden and cooked through

Serve with ranch dressing or honey mustard
