Ingredients
- 1/3 cup cider vinegar
- 3/4 cup sugar
- 2 Tablespoons fresh lemon juice
- 1 teaspoon salt
- 1 cup vegetable oil (I use olive)
- 1/2 small red onion -- grated
- 1 1/2 Tablespoons poppy seeds
- 1 teaspoon dry mustard
- 1/2 teaspoon paprika
- 1 1/2 pounds fresh spinach -- washed, drained and
- 2 cups strawberries -- sliced
- 1 cup walnuts -- chopped

Step 1
For the dressing, combine vinegar, sugar, lemon juice and salt in saucepan and heat until sugar dissolves, stirring frequently. Cool to room temperature. Whisk in oil, onion, poppy seeds, dry mustard and paprika; set aside.
Combine spinach, strawberries and walnuts in salad bowl.
Add a little of the dressing at serving time. Toss gently. Serve remaining dressing alongside the salad, so guests may help themselves.
