Spinach Cranberry Salad

Ingredients
- 1 1/2 tsp. butter
- 1/4 c. and 2 T. almonds, blanched and slivered
- 1/2 lb. spinach, rinsed and torn into bite-size pieces
- 1/2 c. dried cranberries
- 1 T. toasted sesame seeds
- 1 1/2 tsp. poppy seeds
- 1/4 c. white sugar
- 1 tsp. minced onion
- 1/8 tsp. paprika
- 2 T. white wine vinegar
- 2 T. cider vinegar
- 1/4 c. vegetable oil

Preparation
Step 1
In medium saucepan, saute the almonds in the butter until lightly toasted. Remove from heat and let cool. In a large bowl, toss the spinach with the toasted almonds and cranberries. In a medium bowl whisk the sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar, and vegetable oil together. Toss with spinach just before serving.
Optional: Add sliced broiled chicken pieces.
