Ingredients

  • 1 pound red potatoes, cubed
  • 3 tablespoons water
  • 3/4 pound smoked kielbasa or Polish sausage, cut into 1/4-inch slices
  • 1/2 cup chopped onion
  • 1 tablespoon olive oil
  • 2 tablespoons brown sugar
  • 2 tablespoons cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon pepper
  • 4 cups fresh baby spinach
  • 5 bacon strips, cooked and crumbled

Step 1

Place potatoes and water in a microwave-safe dish. Cover and microwave on high for 4 minutes or until tender; drain.

In a large skillet, saute kielbasa and onion in oil until onion is tender. Add potatoes; saute 3-5 minutes longer or until kielbasa and potatoes are lightly browned.

Combine the brown sugar, vinegar, mustard, thyme and pepper; stir into skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until heated through. Add spinach and bacon; cook and stir until spinach is wilted. Yield: 4 servings.

I substituted kale for the spinach and used Tofurkey kielbasa. It was awesome!

This recipe has become a regular in our dinner rotation! It's easy, filling, and pleases husband, kids and me! I always make with light kielbasa and extra spinach and it turns out great. We often omit the bacon, too, when we're trying to go lighter.

DH and I loved this! It reminded us of a meal we ate at the Biergarten restaurant in Epcot! I cooked my potatoes longer b/c I don't like hard potatoes and I added additional salt. I also used less spinach b/c my kids hate green food:)

Tried this tonight for the first time since the only thing we had left in the fridge was kielbasa and some potatoes... I will never make this again. The whole place reeked of vinegar, the potatoes just turned to a mush and the kielbasa never browned because the potatoes made a mush gravy. The sauce tasted nothing like a sauce... the vinegar was way overpowering! I am very disappointed after reading how other's reviewed this I was looking forward to a hearty tasty meal for the family. Looks like we'll be ordering pizza tonight.

Not impressed..too much salty sausage for the amount of potatoes, potatoes too mushy, not enough sauce for the amount of potatoes so there was nothing to 'boil'...very disappointed.

Taste was nasty. All I could taste was the thyme and vinegar.

I absolutely love this recipe! It has a unique but wonderful flavor and even my picky husband ate two servings!

This is a great base recipe - I followed exactly for the sauce, but added one can of cannellini beans and about 6oz of sliced baby bella mushrooms. The bacon doesn't add much unless you make it crispy (which I didn't, since all I had was thick-cut strips), so next time I will either use thinner bacon or omit the bacon altogether in favor of a 1/2 lb of sage breakfast sausage. More meat is a must!

We love this recipe, but don't care for the spinach... I add sliced carrots instead. I brown the carrots and potatoes first, then add the kielbasa.

My 93 year old father is a very picky eater and he loved this meal. It is definitely a make again recipe. I used Turkey Kielbasa because I felt it is a better choice for our family.

I omitted the spinach and onions (picky boyfriend) but this was delicious nonetheless. I have made it countless times since we first tried it, and it never gets old! As a bonus - we had some left over while camping, and it was delicious served on top of scrambled eggs for breakfast in the morning, with a bit of shredded Cheddar cheese to garnish.

I've made this several times. I use Honey Mustard - my extremly picky kids even eat this! LOVE IT!

Next time I will double this! My whole family loved it (once my 5 yr old got over the wilted spinach :)!

This recipe was super sweet, and there was so much spinach! I do not want to make this again :(

Only thing I changed was using good Texas Hill country sausage instead of Kielbasa and I cooked my potatoes in the bacon drippings left from the 3 strips I fried. Next time I'll salt the potatoes when I start cooking them since the finished product lacked flavor, which surprised me. Doubling the sauce ingredients (except the oil) would be a consideration. More spinach wouldn't hurt, either. Otherwise, good for a quick meal.

Delicious, comforting and simple!


It sounded so good, but we found it rather bland. Disappointing.
