We both love this and it's an easy make-ahead dinner.
12/05/15 - Most recently, I just tossed my shrimp (in chunks) and avocado (no apple) with romaine and arugula tossed with Pepperoncini Picante, lemon juice and olive oil. I really liked that and in that case, you can reduce the dressing a bit if it's just for Dan.

Ingredients

  • MARIE ROSE SAUCE:
  • 1/2 ripe avocado
  • 1 medium apple, cored and diced
  • 1/2 lemon
  • 8 - 10 oz. cooked large shrimp (10 - 12) (If you're going to make this, don't bother with anything other than Tarini's shrimp)
  • 2 tablespoons Hellman's Light
  • 1/4 cup Greek yogurt
  • 1 tbsp. chile sauce or ketchup
  • pinch cayenne
  • dash tabasco
  • 1/2 dash Worcestershire sauce
  • 1/2 splash brandy, or to taste
  • 1/2 head iceburg or romaine lettuce

Preparation

Step 1

* Cut the avocado in half, remove the pit and score the flesh into cubes. Dice the apple and combine with the avocado. Squeeze lemon juice over to prevent discolouration.

* To make the sauce, mix the mayo, chili sauce, cayenne and a squeeze of lemon juice together in a bowl. Season to taste with Tabasco, Worcestershire and a splash of brandy.

* Clean and devein shrimp, removing tails for easier eating, unless you're trying to impress someone.

* If using raw shrimp, use shrimp boil recipe to cook shrimp, drain and refrigerate until serving time.

* If serving in a bowl or glass, cut shrimp into bite-sized pieces. If serving with a wedge, leave whole.

* Place a spoonful of the sauce in the bottom of each serving glass. Add a layer of shredded lettuce to each glass. Spoon the avocado and apple over the lettuce and top with another layer of sauce. Arrange the shrimp on top and finish with a final layer of sauce.

* ALTERNATE SERVING METHOD (02/07/10) Cut a head of iceberg into wedges and place 1/4 of a head on each plate. surround with avocado slices and shrimp and drizzle all with the dressing.
