Ingredients

  • 2 1/2 to 3 lb. fryer cut into pieces; skin removed
  • 1 c. skim milk
  • 1 to 2 c. Cornflake crumbs

Step 1

Line a shallow pan with foil, spray foil with olive oil or cooking spray. Dry pieces of chicken thoroughly. Dip into skim milk, shake and roll in corn flake crubs. Let stand a few minutes so coating will stick and re-roll in crumbs if needed. Place chicken pieces on the foil so they do not touch and are not crowded. Spray lightly with Olive oil. Season with salt & pepper. Bake in preheated 400 degree oven for 45 minutes. You may want to turn heavy breast pieces half-way through the baking time. Check to be sure chicken is done.
