Ingredients

  • 1 Fryer Chicken (cut up)
  • 1 Cup Shallots or Green Onion (finely chopped)
  • 1/2 Pound Mushrooms (sliced)
  • 1-8 Ounce Sour Cream
  • 1/2 Cup Dry White Wine or Vermouth
  • 1 Stick Butter
  • 1 Tbsp Oil
  • 1/8 Tsp Cayenne Pepper
  • 1 Cup Water or Chicken Stock
  • Salt
  • Pepper

Preparation

Step 1

Salt and pepper the chicken pieces and brown them in a heavy skillet in the butter and oil. Remove the chicken and add the onions and mushrooms. Saute' for 5 minutes over a very low fire. Add the sour cream, stock or water, cayenne, salt, pepper, and chicken. Cover and simmer slowly until chicken is tender, about 20-25 minutes. Add the wine and stir well, then cook for 5 more minutes. Serve over hot cooked rice.
