Ingredients
- Filling:
- 2 c. graham cracker crumbs
- 6 Tbsp. butter melted
- 1/4 c. sugar
- 4 cream cheese softened
- 1 c. sugar
- 1/2 c. heavy whipping cream
- 1/4 c. lemon juice
- 2 Tbsp. flour
- 1 Tbsp. grated lemon peel
- 2 1/2 tsp. vanilla
- 1 tsp. lemon extract
- 10 drops yellow food coloring
- 5 eggs beaten

Step 1
In small bowl combine the cracker crumbs, butter and sugar. Press onto the bottom and 2" up the sides of a greased 10" springform pan. Place pan on baking sheet. Bake at 325 for 10 min. Cool on wire rack.
In large bowl beat cream cheese and sugar until smooth. Beat in the cream, lemon juice, flour, lemon peel, extracts and food coloring. Add eggs; beat on low speed just until combined. Pour into crust. Return pan to baking sheet.
Bake 55-65 min or until center is almost set. Cool on wire rack for 10 min. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan.
