Ingredients

  • 1 1/2 sticks room temp butter
  • 1 c light brown sugar
  • 1/3 c granualted sugar
  • 1/2 tsp salt
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 3/4 c rolled oats
  • 3/4 c shredded unsweetened coconut
  • 1/2 c whole wheat flour
  • 1 1/4 c dark chocolate chunks

Preparation

Step 1

1) in large bowl, mix first 4 ingredients on high til fluffy, about 5 minutes. beat in next 3 ingredients scraping down sides of bowl. add oats, coconut and flour. mix low til blended. stir in chocolate. let stand til oats soften, about 30-60 minutes.

2) preheat 350, position racks in upper and lower third of oven. line cookie sheets with parchment and drop the dough by tablespoon onto sheet about 3" apart

3) bake, switching pans halfway thru til just golden, about 14 minutes. cool on sheets for 2 minutes, then transfer to cooling rack
