Ingredients

  • 1 Tablespoon olive oil
  • 3 Tablespoons butter
  • 2 eggs
  • 1 cup half and half
  • 2 Tablespoons flour
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • pinch of nutmeg
  • 2 oz. grated Swiss cheese
  • chopped parsley

Preparation

Step 1

Prepare and partially bake piecrust in a 9" pie plate.

Saute onions in oil and butter over low heat until golden yellow. Beat together eggs, half and half, flour, S&P and nutmeg, then add onions and half of the grated cheese. Pour into piecrust. Top with remaining cheese and bake at 375 degrees for 25-30 minutes or until golden brown. Garnish with parsley.
