Ingredients
- 1/2 a 10 oz. pkg of frozen spinach
- 1 large potato (peeled and sliced)
- 1 large carrot (shredded)
- 4 scallion
- 2 garlic cloves-sliced
- 1 cup canned chicken broth diluted with 1 1/4 cups water
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- 3/4 cup milk
- 1 teaspoon butter
- 2 Tablespoons grated Parmesan
- 1/2 a small red bell pepper

Preparation
Step 1
Combine first 8 ingredients in pot. Simmer about 15 minutes, until tender. Puree solids and return to pot. Stir in milk and butter. Sprinkle with cheese and top with pepper.
