Ingredients

  • 6 oz. salmon fillet (For demonstration purposes I am using one portion of salmon. You can cook as many as four at a time.)
  • 8 oz. white onions (sliced)
  • 3 oz. of carrots (peeled & sliced)
  • 1/2 bunch parsley stems
  • 8 sprigs thyme
  • 4 cloves garlic
  • 1 tbl. peppercorns
  • 2 tbl. kosher salt
  • 1 qt. white wine (dry)
  • 1 qt. water

Step 1



Combine Ingredients and Simmer
For the first step we want to take our knife and crush the garlic. For the next step combine everything in a pot except for the salmon and the peppercorns. We’re going to bring this mixture to a very low simmer. We are going to let it simmer for 10 minutes. After that we will add the peppercorns and let it simmer for five more minutes.

So, 10 minutes later we are going to add the peppercorns and let it simmer for five more minutes. Five minutes later and we are done with this part of the recipe. You can turn off the heat.
Strain Court Bullion, Place in Pan
What you have just created is called a court bullion. It is a classic French poaching liquid perfect for poaching salmon. So, we have strained out our court bullion and put it in a pan. I’m letting it come up to a very low simmer as you see here.
Poach Salmon for Nine Minutes
So, the next thing you want to do is take your salmon and put it right there inside of the court bullion. We are going to let this poach very gently for nine minutes. Nine minutes later our salmon has done so we are going to remove it from the heat. So here is your poached salmon. It would go very nicely with some steamed asparagus.
