Ingredients

  • 8 oz. spaghetti
  • 1 medium carrot, peeled and sliced
  • 4 slices bacon, diced
  • 1 small onion, peeled and chopped
  • 1 small zucchini, sliced
  • 1 red pepper, seeded and chopped
  • 8 oz. ground beef
  • 1 can (15 oz.) tomato sauce
  • 1 t. chopped garlic
  • 1 1/2 t. Italian seasoning
  • 1 cup broccoli florets
  • 2 T. fresh parsley, chopped

Step 1

In large saucepot of boiling water, cook spaghetti and carrots according to pasta package directions. drain; reserve 1 1/2 cups liquid.
Meanwhile, in large skillet over medium heat, cook bacon 4 minutes or until crisp, stirring occasionally. Remove bacon from skillet; drian on paper towels. discard all but 2 T. bacon drippings from skillet.
Add onions, zucchini and peppers to skillet with bacon drippings. Cook 6 minutes or until tender. Add beef. Cook 6 minutes or until beef is browned, stirring to break up meat. Stir in tomato sauce, garlic, Italian seasoning, broccoli, parsley and reserved pasta liquid. Increase heat to high and bring to a boil. Reduce heat to medium; let simmer 20 minutes. Season with salt and ground black pepper, if desired. Stir in spaghetti mixture.
