Ingredients

  • 8 cups chicken or vegetable stock
  • 1 cup green lentils, rinsed and sorted
  • 8 ounces mushrooms, chopped
  • 2 carrots, peeled and chopped
  • 2 stalks celery including leaves, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, finely chopped
  • 1 tsp. dried thyme or marjoram leaves
  • 1/4 cup chopped fresh dill or parsley
  • Salt and freshly ground black pepper

Preparation

Step 1

In a large Dutch oven or stockpot, combine stock, lentils, mushrooms, carrots, celery, onion, garlic and thyme.
Bring to a boil; reduce heat, cover and simmer 35 to 40 minutes or until lentils are tender. Stir in dill or parsley. Adjust seasoning with salt and pepper to taste.
