Ingredients

  • Chocolate Tart Pastry:
  • 6 T butter
  • 1/2 C sugar
  • 3/4 t vanilla
  • 1/8 t salt
  • 1/4 C + 2 T unsweetened cocoa powder
  • 3/4 C flour
  • Cheesecake filling:
  • 5 oz. semisweet chocolate
  • 1/4 C water
  • 3 8oz cream cheese pkg.
  • 1 1/4 C sugar
  • 1/2 t vanilla
  • 2 eggs

Step 1

1. Preheat oven to 350 deg. Grease 8 in springform pan.

2. Beat butter, sugar, vanilla and salf until smooth. Blend in cocoa just til dark, smooth paste. Mix in flour til crumbly.

3. Firmly pat 3/4 of pastry into bottom of pan. Crumble remaining pastry into a shallow baking pan. Bake both 10 minutes, remove pan of extra crumbs. Bake crust 5 mins. more. Place both pans on rack to cool. Pulverize crumbs and store in airtight container til needed.

4. Reduce oven to 325 deg. to make filling, melt chocolate with 1/4 C water in saucepan til smooth. Beat cream cheese til smooth. Add sugar gradually, beating til smooth. Blend in vanilla, then eggs one at a time. Set aside 1 C of batter. Pour remaining batter over crust.

5. Stir warm chocolate into 1 C reserved batter. Pour mixture in a thick ring 1/2 inch from sides over plain batter, leaving a bullseye in center. Use soup spoon to gently scoop and marble batter.

6. Bake 1 hour 10 mins. Run knife around edges to loosen from pan. Cool on a rack and refrigerate covered in plastic wrap 4 hours.

7. To serve, remove springform ring. Press reserved crust crumbles into edge of each slice.
