Kombucha Tea

Kombucha is a medicinal tea, good for the liver. It has an apple cider vinegar taste to it, sort of bubbly as well. You can flavor it with all kinds of things. This is a basic recipe with a scoby already for it.

Ingredients

  • 1/2 cup sugar
  • 4-6 bags tea - for loose leaf, 1 bag of tea = 1 tsp
  • Starter Culture – SCOBY
  • 2/3 cup starter liquid
  • 5 1/2 c. purified/bottled water or boil for 10 minutes
  • 1/2 gallon glass jar
  • cloth cover or coffee filter
  • rubber band

Preparation

Step 1

Boil 5 1/2 cups of water for 10 minutes.
Add tea bags and steep 10 minutes, then remove tea bags.
Add sugar and stir to dissolve.
Cool completely. Hot water will kill the scoby. Pour into a jar.
Add SCOBY and starter liquid.
Cover with cloth or coffee filter and secure with the rubber band.
Set in a warm location out of direct sunlight (unless vessel is opaque).
Do not disturb for 7 days.
After 7 days, or when you are ready to taste your KT, gently insert a straw beneath the SCOBY and take a sip. If too tart, then reduce your brewing cycle next time. If too sweet, allow to brew for a few more days. Continue to taste every day or so until you reach your optimum flavor preference.
Save scoby and 2/3 c for next brewing. Split scoby when the mother makes a daughter. Share or toss.
