Ingredients

  • 3 Tbsp. Vegetable Oil
  • 1/2 Cup Chopped Onions
  • 1 lb. Ground Beef
  • 1 Tbsp.
  • Tex Mex Seasoning Mix* Recipe follows
  • 2/3 Cup Chopped Tomato
  • 1/2 Cup Sliced Scallions
  • Salt & Pepper
  • 4 Cups Torn Lettuce
  • 1 Cup Shredded Cheddar Cheese
  • 1 1/2 Cups Sour Cream
  • 1 Cup Salsa Cilantro Sprigs for garnish
  • Tex Mex Seasoning Mix
  • 1 Tbsp + 1 tsp cayenne pepper
  • 2 Tbsp + 2 tsp dried oregano
  • 2 Tbsp + 2 tsp ground cumin
  • 1 Tbsp + 1 tsp ground coriander
  • 2 tsp ground black pepper
  • 2 tsp sea salt

Preparation

Step 1

Combine all ingredients in a jar & shake until blended. Store for up to 6 months
Place a large skillet on med-high heat.
When hot add oil & onions. Saute for about 5 minutes.
Add ground beef & saute until browned about 5 minutes.
Drain off any access fat.
Add Tex Mex Seasoning mix & continue cooking for 3 minutes.
Remove from heat.
Season w/ salt & pepper.
Line 4 plates w/ lettuce.
Top w/ meat mixture, tomatoes and scallions.
Sprinkle w/ cheddar cheese.
Serve w/ sour cream & salsa.
Garnish w/ cilantro.
