Ham & Egg Enchiladas

Ingredients
- 2 tbsp. butter
- 1 sm. red bell pepper, chopped
- 3 green onions, sliced
- 1/2 c. diced ham
- 8 eggs
- 8 (7-8") flour tortillas
- 1/2 c. (2oz) pepper jack cheese
- 1 can (10oz) enchilada sauce
- 1/2 c. salsa
- 1 1/2 c. (6oz) pepper jack cheese (optional)

Step 1
Preheat oven to 350.
Melt butter in lg. skillet over med. heat. Add bell pepper & onions, cook 2 mins. Add ham; cook 1 min.
Lightly beat eggs w/ wire whisk in med. bowl. Add eggs to skillet; cook till eggs are set but still soft, stirring occasionally.
Spoon about 1/3 c. cup egg mixture evenly down cetner of each torilla; top w/ 1 tbsp. cheese. Roll up tortillas and place seam side down in shallow 11 x 7 baking dish.
Combine enchilada sauce and salsa in small bowl; pour evenly over enchiladas.
Cover dish w/ foil; bake 20 mins. Uncover, sprinkle w/ 1 1/2 c. cheese, if desired. Continue baking 10 mins. or till enchiladas are heated through and cheese is melted.
