Ingredients

  • 2 lbs. broccoli crowns
  • 2 cans (30 oz) LeSueur baby carrots
  • 4 cans artichoke hearts (56 oz)
  • 1 quart grape tomatoes
  • 4 yellow squash
  • 4 green squash
  • 12 oz. sliced Portabella mushrooms
  • 4 boxes (128 oz) chicken broth (or beef)
  • 4 pounds ground turkey
  • 1/2 teaspoon garlic powder
  • 2 cups brown rice
  • 2 cans (30 oz) LeSueur peas
  • 6 cups Quaker oatmeal

Preparation

Step 1

Use a food processor and chop/grind the broccoli crowns, carrots, artichoke hearts and tomatoes. Set aside.

By hand, chop the yellow squash, green squash and mushroom into doggie bite-sized pieces. Set aside.

In a lobster pot, pour in the broth and bring to boil. Add the ground turkey and break it up as much as possible. Once the turkey is thoroughly cooked, add the garlic powder, brown rice and peas.

Add in ALL the rest of the vegetables, and turn the heat down to a simmer for 90 minutes.

Turn off the heat, add the oatmeal. Let stand until cool.
