Ingredients

  • Sauce:
  • 2-3 cloves garlic, crushed
  • 1 cup finely chopped onion
  • 2 TBS olive oil
  • 3 cups tomato sauce
  • 1 small can tomato paste plus one can of water
  • 1 TBS oregano
  • 1/4 cup minced fresh parsley
  • Brasciole:
  • 1 1/4 " sliced round, flank or breakfast steak
  • 2 cloves garlic, chopped
  • 3 hard cooked eggs, sliced
  • 1/4 cup Romano
  • 4 slices provolone
  • 1/3 cup chopped parsley
  • 4 slices salami
  • flour
  • salt and pepper to taste
  • 1/4 cup olive oil

Step 1

Sauce: In large saucepan placed over medium high heat saute garlic and onion in oil for a few minutes. Add in tomato sauce, paste and water. Add spices and stir to blend. Reduce heat and simmer for an hour.

Brasciole: Place steak on work surface and season with salt, pepper and sprinkle with chopped garlic. Layer cooked eggs over steak. Top with Romano, Provolone, parsley and salami. Tightly roll up steak and secure with kitchen string or skewers. Dust with flour and season with salt and pepper.
Heat olive oil in Dutch oven, brown beef rolls on all sides. Cover with sauce, reduce heat to medium-low and cook 1 1/2 hours or until beef is tender OR bake at 400 degrees for one hour. Remove rolls to platter, spoon sauce over rolls and sprinkle with Romano and parsley.
