Creamed Spinach

Ingredients
- 2 pounds fresh spinach (washed well and large stems removed)
- 2 tablespoons unsalted butter
- 1/2 cup finely chopped shallots
- 1 teaspoon minced garlic
- 1/2 teaspoon Dijon mustard
- 3/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/8 teaspoon nutmeg
- 1/2 cup heavy whipping cream

Preparation
Step 1
In a sauté pan at medium high heat add the butter. When the butter has melted add the shallots and garlic. Cook for one minute stirring frequently. Add the nutmeg then add the spinach. Cook for two minutes stirring frequently then add the Dijon, whipping cream, salt and pepper. Reduce the cream to your desired taste. Adjust seasoning if needed.
