Ingredients

  • 1/4 cup uncooked wheat berries
  • 1 tbsp. cranberry or orange juice
  • 1 tablespoon EVOO
  • 1 tablespoon raspberry vinegar
  • 1/2 tablespoon balsamic vinegar
  • 1 teaspoons Dijon mustard
  • 1/4 teaspoon salt
  • 1/2 ounce dried cranberries
  • 1/2 ounce dried cherries
  • 1 stalk celery, thinly sliced
  • 2 green onions, sliced
  • 1/2 oz. slivered almonds, toasted if you have the time
  • 2 tbsp. dried currants
  • freshly ground black pepper

Preparation

Step 1

* Cook wheat berries in rice cooker until tender.

* Combine dressing ingredients in a large bowl. Add dried fruit and let stand 30 minutes.

* Add wheat berries and remaining ingredients to vinaigrette, and toss to combine. Chill at least 4 hours or overnight.
