Ingredients
- 1/4 cup uncooked wheat berries
- 1 tbsp. cranberry or orange juice
- 1 tablespoon EVOO
- 1 tablespoon raspberry vinegar
- 1/2 tablespoon balsamic vinegar
- 1 teaspoons Dijon mustard
- 1/4 teaspoon salt
- 1/2 ounce dried cranberries
- 1/2 ounce dried cherries
- 1 stalk celery, thinly sliced
- 2 green onions, sliced
- 1/2 oz. slivered almonds, toasted if you have the time
- 2 tbsp. dried currants
- freshly ground black pepper

Preparation
Step 1
* Cook wheat berries in rice cooker until tender.
* Combine dressing ingredients in a large bowl. Add dried fruit and let stand 30 minutes.
* Add wheat berries and remaining ingredients to vinaigrette, and toss to combine. Chill at least 4 hours or overnight.
