- 1 c. sugar
- 1 c. sour cream
- 1 egg
- 2 c. flour
- 1/2 tsp. soda
- 1 tsp. vanilla
- 1/2 tsp. salt
- 1/2 c. shredded coconut
- 2 tsp. baking powder

Step 1
Mix sugar, sour cream, and egg; beat for 1 minute. Sift together flour, soda, salt, and baking powder and add to cream mixture. Add vanilla; beat for 2 minutes. Stir in coconut.
Pour into paper cupcake wrappers. Bake at 400 degrees for 20-25 minutes. Very good.
