- 1 1/3 cups smashed ripe bananas
- 1/3 cup vegetable oil
- 1 egg
- 1/2 cup brown sugar
- 1/4 cup sugar
- 1 1/2 cups flour
- 1/4 cup cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/4 cups mini chocolate chips, divided

In a mixing bowl, beat the bananas, oil, and egg. Add the sugar and beat again. Sift together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon. Slowly stir into the wet ingredients until combined. Do not over mix. Stir in 1 cup of the mini chocolate chips by hand.
Line a muffin tin with cupcake liners. Divide the batter into 15 liners. Sprinkle the tops with the extra chocolate chips. Bake at 350* for 18 minutes. Let cool in the pan for 2-3 minutes, then remove to a wire rack to cool completely. Store in a sealed container on the counter. As with any baked good, these get better after sitting over night in a container. Makes 15 muffins.
