Ingredients
- 3/4 lb cooked shrimp (peeled and deveined with tails removed)
- 1 1/2 cups Shredded Mexican cheese blend (or cheddar)
- 1 (4 ounce) can chopped green chilies (drained)
- 1/3 cup green onion (chopped)
- 1/4 cup ripe black olives (drained and sliced)
- 1/2 cup mayonnaise
- 1/4 teaspoon ground cumin
- 48 tortilla chips (scoops)

Preparation
Step 1
Pre-heat the oven to 350 degrees. In a large bowl combine shrimp, cheese, chilies, onions and black olives. In a separate small bowl combine mayonnaise and cumin. Add to shrimp mixture and toss to coat. Place about 1 tablespoon of the shrimp mixture into each tortilla scoop and lay out in rows on a baking sheet.
Place into the oven and bake at 350 degrees for 5-10 minutes or until cheese has melted. Serve warm.
