Ingredients
- 2 1/4 cups sifted cake flour
- 1 1/2 cups sugar
- 3 1/2 tsp. baking powder
- 1 tsp. salt
- 1/2 cup soft shortening
- 1 cup milk
- 1 tsp. vanilla or other flavoring as desired
- 4 egg whites (1/2 - 2/3 cup), unbeaten

Step 1
Heat oven to 350 degrees F. Grease and flour 2 8' or 9" x 1 1/2" layer pans or a 13" x 9" pan. Sift dry ingredients into mixer bowl. Add shortening, 2/3 cup milk & flavoring. Beat 2 minutes. Add 1/2 cup milk & egg whites. Beat 2 more minutes. Pour into prepared pans. Bake layers 30-35 minutes, 13" x 9" pan 35-40 minutes. For coconut cake, frost with 7-minute boiled frosting and sprinkle with coconut.
