Ingredients
- 1/3 cup frozen spinach, thawed, well drained and chopped
- 2-3 tablespoons breadcrumbs
- Freshly ground black pepper
- 1 egg, beaten
- 6 ounces fresh sole
- 1 tablespoon unsalted butter

Preparation
Step 1
1. Preheat oven at 350°F. In a mixing bowl, combine spinach, breadcrumbs and pepper until well blended. Add enough egg to bind mixture together, about 1/2 of egg (add more breadcrumbs if mixture is too wet). Discard extra egg or save for later use.
2. Place fish vertically on work surface. Place stuffing on end of fish nearest you. Starting at that end, gently roll fish around stuffing until you reach other end of fish.
3. Grease bottom of baking pan with butter. Place fish, seam side down, in baking pan and bake for about 20-25 minutes, until fish is cooked through
