BREAD****Tuscan Bread Salad - Mediterranean Fresh

24/04/10 - Very good lunch for me. Would make a nice side dish as well if you scaled it down a bit. Tomato vinaigrette is very good with it but it would handle a basic or red-wine vinaigrette just as well.

Ingredients
- 55 grams bread of choice, cubed and toasted
- 8 cherry tomatoes, halved
- 1 pickling size cucumber, diced or sliced, or equivalent amount of zucchini
- 1 tbsp. minced red onion or shallot
- 1 tbsp. fresh basil chiffonade
- 1 tbsp. chopped fresh parsley
- 1 ounce mozzarella or feta or Haloumi, diced
- 2 Tbsp. basic Red Wine Vinaigrette

Preparation
Step 1
Toss bread cubes with 1 tbsp. dressing and let sit for about 1/2 hour.
Combine remaining ingredients (at room temperature) and remaining tablespoon of dressing and serve.
