Ingredients

  • 1 large spaghetti squash, quartered
  • 1/2 bag shredded carrots
  • 2 8-oz packages mushrooms, sliced
  • 2 bags fresh spinach
  • 2 jars spaghetti sauce
  • 1 large onion, chopped
  • minced garlic
  • Italian seasoning
  • Cajun seasoning
  • garlic powder
  • onion powder
  • red pepper flakes
  • olive oil
  • butter
  • shredded cheese

Preparation

Step 1

Boil squash until tender. Remove from pan and cool.

Heat olive oil and butter in large pot over high heat. Add minced garlic and onion; cook until caramelized, stirring occasionally. Add shredded carrots; cook an additional 5-10 minutes. Add mushrooms; cook until tender. Add spinach; cook until wilted. Add spices. Add squash. Stir in sauce. Pour into 9 x 13 glass pan. Bake at 350 degrees for 1 hour. Sprinkle with cheese. Increase temperature to 375 to 400 degrees and bake until cheese is bubbly. Remove from oven and cool before cutting.
