Ingredients

  • 1 cup melted organic extra virgin coconut oil
  • 1/4 to 1/3 cup of lemon juice (mix and taste as you go along)
  • 2 tablespoons of raw sugar cane, turbinado sugar, sucanat, honey, or maple syrup (or more– mix and taste as you go along)
  • 1/4 teaspoon pink Himalayan salt (we use HimalaSalt)
  • 2 trays of candy molds

Preparation

Step 1

I like to melt the oil in a makeshift double boiler by putting it in a glass measuring cup and then putting the cup in a pan of hot water. Combine all ingredients in a food processor or with a handheld mixer (I use a Breville food processor) and pour into the candy molds. The great thing about this is that since it’s a raw treat, you can taste it as you go along and make it as sweet or sour as you like. Everything has to be very well mixed into the oil, so make sure as you’re pouring the last bit in that it’s not sugar or honey-heavy. If you’re pouring and can see that the sweetener has separated from the oil, it is not mixed well enough and won’t freeze evenly. Freeze the molds for at least an hour before popping the candies out. They’ll keep fine in a home that’s 68/69 degrees or cooler, but we store ours the fridge until they’re all gobbled up.
