Ingredients
- 10 sun-dried tomato halves in oil
- 2 tbsp. EVOO
- 1 clove garlic, minced
- 1/2 loaf french bread, cut in 1" cubes
- 3/4 lb. monteray jack or other mild melting cheese, cut in 1/2" cubes

Preparation
Step 1
Drain 2 tbsp. of oil from jar of tomatoes and put in a bowl.
Cut the tomatoes into quarters and set aside. Alternately, use sun dried tomato strips for convenience.
Stir the olive oil, garlic and salt into the tomato oil. Toss the cheese and bread cubes in the oil until well coated then thread onto skewers, alternating with the sun dried tomato pieces.
Grill for about 5 minutes, turning frequently, until bread is lightly toasted and cheese just starts to melt.
Serve immediately.
