Ingredients

  • 1 tbsp. red wine vinegar
  • 3 tbsp. olive oil
  • 1 tsp. dijon
  • 1 clove garlic, minced
  • Salt and black pepper to taste
  • 1 - 19 oz. can chickpeas, drained
  • 1 sweet pepper, diced
  • 1/2 to 1 jalapeno, finely diced
  • 2 stalks celery thinly sliced
  • 8 black olives, pitted and chopped
  • 2 tbsp. thinly sliced red onion
  • 2 scallions, minced
  • 1 carrot, shredded or finely diced
  • 2 tbsp. fresh parsley or cilantro
  • 1 tbsp. oregano, thyme, dill or basil
  • 1 tbsp. chives

Step 1

In large bowl, whisk together vinegar, olive oil, mustard, pepper and salt. Add remaining ingredients and chill until serving
