Ingredients
- 1 tbsp. red wine vinegar
- 3 tbsp. olive oil
- 1 tsp. dijon
- 1 clove garlic, minced
- Salt and black pepper to taste
- 1 - 19 oz. can chickpeas, drained
- 1 sweet pepper, diced
- 1/2 to 1 jalapeno, finely diced
- 2 stalks celery thinly sliced
- 8 black olives, pitted and chopped
- 2 tbsp. thinly sliced red onion
- 2 scallions, minced
- 1 carrot, shredded or finely diced
- 2 tbsp. fresh parsley or cilantro
- 1 tbsp. oregano, thyme, dill or basil
- 1 tbsp. chives

In large bowl, whisk together vinegar, olive oil, mustard, pepper and salt. Add remaining ingredients and chill until serving
