- 1 spaghetti squash
- 2 cups chopped fresh broccoli
- 1 small onion chopped
- 2 diced garlic cloves
- 1 tbsp olive oil
- low carb marinara sauce

Spaghetti squash is a great substitute for pasta. To prepare it, cut in half (lengthwise) Scoop out seeds and pulp as you would any squash. Place in a glass baking dish with about 1/2 inch of water, rind side up. Bake 40 to 45 minutes at 375 degrees. As a quicker alternative you can keep the squash whole, poke holes all around it with a sharp knife. Place it in the microwave for 8 to 10 minutes on high. Let it stand for a few minutes, as it will be hot to touch. Cut lengthwise, and scoop out seeds. Then running a fork through it stem to stem separate the strands.
In a medium frying pan, sauté broccoli, onion, garlic and oil until veggies are crisp tender. Add squash and heat thoroughly. Serve on plates topped with heated marinara sauce.
