Ingredients
- 1 1/4 cup flour
- 1 1/4 cup sugar
- 1/2 tsp almond or vanilla extract
- 5 eggs
- 2 sticks butter (softened)
- 3 large toaster oven pans (10 1/2 x 6 1/2 x 3/4)
- waxed paper
- green and red food coloring
- 3 squares semi sweet chocolate (or use chocolate chips)
- 1 10-12 oz jar raspberry, strawberry or apricot spreadable fruit

Preparation
Step 1
Cream sugar & butter; beat eggs add extract to eggs; add to creamed mixture; add flour and mix.
Grease pans- line with waxed paper- grease waxed paper
Divide batter into 3 parts- leave one yellow; add 8 drops red food coloring to one; and 10 drops green to the other (stir them)
Bake at 350 and remove from pans at once and cool thoroughly. Remove paper. When cool spread fruit over green layer; place yellow layer on top, add more fruit; put pink layer on top. When spreading fruit do not use too much and do not bring to the very edge of layers. Cover with plastic wrap and weigh down with cutting board. Refrigerate overnight. Melt chocolate and spread on top; edges and sides- let dry 30 minutes and cut. Cut when chocolate is not too hard otherwise chocolate cracks
