Ingredients
- 2 cups flour, sifted
- 1 Tbsp baking powder
- 1/2 tsp salt
- 3 Tbsp sugar
- 1 egg, beaten
- 1 cup milk
- 3 Tbsp oil

Step 1
Preheat oven to 450 degrees F. Sift together flour, baking powder, salt and sugar. Combine egg, milk and oil. Pour into dry ingredients. Stir only until moist. Do not over-mix. Spoon batter into greased muffin tins. Fill cups about 2/3’s full. Bake for 20 to 25 minutes
Muffin Variations
Apple-Nutmeg: Peel and dice one apple. Sprinkle with 1 tsp nutmeg and 2 tsp sugar. Stir into batter.
Apricot-Nut: Drain ½ cup cooked, pitted and chopped apricots. Combine with ½ cup chopped walnuts. Stir into batter.
Cheese-Garlic: Combine 1 cup grated cheese with 1/8 tsp garlic salt. Stir well into dry ingredients then add egg, milk and oil.
Lemon-Sugar: Combine ½ cup sugar with 2 Tbsp grated lemon peel. Fill tines to ¼ full with batter. Sprinkle with sugar mixture, then top with lay of patter to fill 2/3’s full.
Berries: Drain ¾ cup washed berries. Add ¼ cup sugar and 1/8 tsp cinnamon. Gently fold into muffin batter.
Carrots: Add ½ cup shredded carrots to dry ingredients.
Jam or Preserves: Fill muffin tins ¼ full with batter. Put 1 tsp jam in middle and top with batter to 2/3’s full.
Orange: Use only ¾ cup milk and add ¼ cup orange juice. Grate 1 Tbsp of orange peel and stir into liquid ingredients. Mix in dry ingredients.
Chocolate: Add 1 cup chocolate chips, ½ cup bakers cocoa and ½ cup sugar.
Try topping with nuts, oats, berries, raisins, chocolate chips, sugar / cinnamon and or streusel, just to name a few!
