Ingredients
- 2 c flour
- 2/3 c butter
- 1 T sugar
- 3 eggs, beaten
- 1 tomato, chopped
- 1 1/2 c milk
- 1 sm. Green onion, chopped
- 6 slices bacon, cooked and crumbled
- Spinach, chopped
- 1 c mild cheddar and jack cheeses, shredded
- Salt, pepper, garlic powder, parsley

Step 1
1. Sift together flour and salt. Cut in butter until resembles coarse sand. Do not add water. Press into 9 inch pie dish and chill for at least one hour
2. Preheat oven 450. Sprinkle bacon, green onion, tomato and chopped parsley on bottom of curst.
3. Add layer of packed spinach (about 1 ½ c unpacked) add shredded cheese on top of spinach
4. Beat the eggs with milk. Add some spices and blend well. Pour over cheese and bake the quiche for 15 min. at 450. Then turn down the oven to 350 and bake another 10 to 15 min .or until knife comes out clean. Serve hot or well chilled.
